Easy Raw Waldorf Salad Recipe

This quick and easy raw salad will satisfy your hunger. It is crunchy, creamy, sweet and super easy to make. You can find many different recipes for Waldorf salad. One of the reasons that I like this one is that it is using the Super nutritious HEMP seed which are a great source of EFA’s and loaded with minerals. Not only that but the hemp seeds are giving you a creamy dressing without using nuts. I love using nuts in recipes but often they can be eaten to much so hemp is a great alternative.

Ingredients Needed:

2 ribs of celery chopped

1 red apple chopped with skin on

1/3 C  organic raisins

1/3 C raw sunflower seeds

2 green onions (scallions) sliced

Optional (1/4 cup celery root cubed in small pieces)

Dressing:

1/2 C hemp seeds

1/3 C water

3 Tbs olive oil

1/8 C lemon juice

1/2 tbs raw sweetener if needed

salt and pepper to taste

Instructions:

Chop and cut all salad ingredients and place in a bowl. Use your food processor or blender to make the dressing. Pour the dressing on the salad and mix well.

SUPER FOOD TIP: Amplify your Waldorf Salad by topping it with a handful of sprouts.
