Last week I made some amazing cashew and macadamia nut cheese sour cream. I usually always stick with cashews but I just ran short of my usual “1 cup” that I needed to soak as the base. So instead I added some left over macadamia nuts in with the cashews and soaked those for a couple of hours. With a touch of apple cider vinegar, salt and pepper, water I gave it a quick blend in the food processor. Topped with with a few handfuls of fresh chives from a friend of the family and voila we had an amazing creamy sour cream or nut cheese. It was thick from the macadamia nuts so it kind of resembled part cheese part cream. Either way it was so yummy and it went perfectly well with these raw flax cracker wraps that I had in the fridge.

So they are stacked high with green pea sprouts, avocado, some hot spices, cherry tomatoes and cream. They were so good and easy that I think I had them a couple of times that week. For those who want to make it more substantial you can add in some black beans puree and have a Mexican style wrap which I did for another day. Things have been really busy for the last couple of weeks and I am just trying to catch up so I am enjoying more of a quick style type of menu.
We are off to pick up our first CSA of the season tonight so I am super excited to see what we will have in our bin!
